Arroz de Marisco

Ingredients:
- 500g mixed seafood (prawns, clams, mussels, squid, etc)
- 2 cups short-grain rice
- 4 cups fish or seafood stock
- 1 onion, chopped
- 4 garlic cloves, crushed
- 1 ripe tomato, chopped
- 1 red pepper, chopped
- 3 tbsp olive oil
- 1 bay leaf
- Salt and pepper, to taste
- A handful of fresh coriander, chopped
- Lemon wedges, to serve
Instructions:

Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent, about 5 minutes.

Add the chopped tomato and red pepper, and continue to cook for another 5 minutes, stirring occasionally.

Add the rice to the pan, stirring to coat it with the vegetable mixture. Add the bay leaf, salt and pepper, and pour in the fish or seafood stock. Bring to a boil, then reduce the heat to low and cover the pan with a lid.

Meanwhile, rinse the mixed seafood thoroughly and drain well.

After about 10 minutes, add the mixed seafood to the pan, pushing it down into the rice. Cover the pan again and continue to cook for another 10-15 minutes, or until the rice is cooked through and the seafood is tender and cooked through.

Remove the pan from the heat and let it sit for a few minutes before removing the lid. Discard the bay leaf and stir in the chopped coriander.
