Ingredients:
1 lb. chicken thighs 1 lb. ground pork sausage 3 cups of white rice 4 cups water or chicken broth 1 onion, chopped 4 garlic cloves, minced 1 red bell pepper, chopped 1 green bell pepper, chopped 1 tomato, chopped 2 tbsp. tomato paste 1 tsp. ground cumin 1 tsp. dried oregano 1 tsp. smoked paprika 4 tbsp. vegetable oil Salt and pepper to taste
Instructions:

In a large pot, heat the vegetable oil over medium-high heat. Add the chicken thighs and brown them on both sides. Remove from the pot and set aside.

Add the ground pork sausage to the pot and cook until brown. Remove from the pot and set aside.

In the same pot, add the chopped onions, garlic, and bell peppers. Cook until the vegetables are soft, about 5-7 minutes.
