Ingredients:
- 1kg chicken pieces
- 2 onions, sliced thinly
- 4-5 garlic cloves, finely minced
- 1 inch ginger, grated
- 2-3 green chillies, slit
- 2 tomatoes, chopped
- 2 tbsp oil
- 2 tbsp coriander seeds
- 1 tbsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp black pepper
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 cup coconut milk
- 2 tbsp chopped coriander leaves
Method:
- Roast the coriander seeds, cumin seeds, fennel seeds and black pepper in a pan on low to medium heat till they are fragrant and lightly toasted. Allow it to cool.
- Grind these spices to a fine powder.
- Heat oil in a large pan, add onions and sauté till they are translucent.
- Add ginger, garlic, green chillies and sauté for another 2-3 minutes.
- Add tomatoes and fry till they are soft and mushy.
- Now, add the roasted spice powder, turmeric powder, red chilli powder and salt. Fry for 2-3 minutes.
- Add the chicken pieces and fry for a few minutes till it changes colour.
- Add 1-2 cups of water, cover and cook on medium flame for 20-25 minutes or until the chicken is cooked.
- Once the chicken is cooked, add coconut milk and simmer for 10-15 minutes until the gravy thickens.
- Garnish with chopped coriander leaves.
- Serve hot with steamed rice or naan.
