Chicken Biryani

Ingredients:
- 4 cups cooked Basmati rice
- 1 lb chicken, cut into small pieces

- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric
- 1/2 tsp garam masala
- 1/4 tsp red chili powder
- 1 tsp salt
- 1/4 cup vegetable oil or ghee
- 2 large onions, thinly sliced
- 2-3 bay leaves
- 2-3 cardamom pods
- 2-3 cinnamon sticks
- 1/4 cup raisins
- 1/4 cup cashews
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint

In a large bowl, mix together chicken, yogurt, ginger paste, garlic paste, cumin powder, coriander powder, turmeric, garam masala, red chili powder, and salt. Cover and marinate in the refrigerator for at least 1 hour (or up to overnight).
