Ingredients:
For the dosa batter:
- 1 cup dosa rice
- 1/2 cup urad dal
- Salt to taste
- Water as required
For the filling:
- 2 cups mixed vegetables (carrots, beans, peas, corn, etc.)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 tbsp oil
- Salt to taste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- Coriander leaves for garnish
For the chutney:
- 1 cup fresh coriander leaves
- 1/2 cup fresh mint leaves
- 1/2 cup grated coconut
- 2 green chilies, chopped
- Salt to taste
- Water as required
Directions:

Soak dosa rice and urad dal in water for at least 4 to 6 hours.

Drain the water and grind the soaked rice and dal to a smooth paste adding water as required.

Add salt to taste and keep the batter aside for fermentation for at least 8 to 10 hours.

To prepare the filling, heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.

Add chopped onions and saute until they become translucent.

Add mixed vegetables, salt, red chili powder, and turmeric powder. Cook for 5 minutes or until the vegetables are tender.

Add chopped tomatoes and cook for another 2 minutes.

For the chutney, grind fresh coriander leaves, fresh mint leaves, grated coconut, green chilies, and salt to taste with water until smooth.

To make the dosa rolls, heat a non-stick pan or a tawa.
