Ingredients:
- 1 gallon of non-homogenized organic milk
- 1 packet of skyr starter culture or 1 cup of skyr yogurt
- Cheesecloth
Instructions:

Heat the milk to 85°C degrees in a large pot on medium heat, stirring regularly to avoid scorching or boiling. Remove from heat and let cool to 40°C degrees.

Add the skyr starter culture or yogurt to the pot and stir well.

Transfer the mixture to a large cheesecloth-lined colander and allow it to drain for 12-24 hours at room temperature. You can also place the colander in the fridge if you prefer thicker skyr.
