Mercimek Köftesi (Lentil Meatballs)
Turkish cuisine is known for its rich and diverse flavors, with regional dishes that take inspiration from the country’s many cultural and historical influences. One such dish that has gained popularity in recent years is mercimek köftesi, or lentil meatballs.
Mercimek köftesi is a vegetarian dish that packs a lot of flavor into small, bite-sized balls. Made traditionally with lentils, bulgur wheat, and a variety of herbs and spices, this dish is not only delicious, but also very healthy. It’s packed with protein, fiber, and complex carbohydrates that help keep you feeling full and satisfied for hours.
One of the great things about mercimek köftesi is how easy it is to make. While the preparation and cooking can take some time, the ingredients are readily available at most supermarkets or grocery stores. And because it’s a vegetarian dish, it’s also budget-friendly.
The star of the dish is the lentils. Lentils are a type of legume that have been cultivated for thousands of years. They’re a great source of protein and fiber, and they’re low in fat and calories. Lentils are also incredibly versatile, and can be used in a variety of dishes, from soups and stews to salads and burgers.
In this recipe, the lentils are cooked until they’re soft and then mashed together with bulgur wheat. Bulgur wheat is a type of cracked wheat that’s used in many Middle Eastern and Mediterranean dishes. It’s a great source of fiber and protein, and it has a nutty flavor that pairs well with the lentils.
To give the lentil mixture more flavor, various herbs and spices are added. Cumin, paprika, and red pepper flakes add a subtle heat, while fresh parsley and green onions provide a bright, fresh flavor. A little bit of tomato paste adds a slightly sweet and tangy note.
Once the mixture is seasoned to taste, it’s time to shape the lentil mixture into small balls. This can be done with wet hands to prevent the mixture from sticking, and the balls can be made as small or as large as you like.
Traditionally, mercimek köftesi is served with tomato wedges, lettuce leaves, and fresh herbs like parsley and mint. It’s also often accompanied by tangy and creamy yogurt sauce, made with garlic, cucumber, and yogurt.
Mercimek köftesi is a delicious and satisfying dish that’s perfect for vegetarians and omnivores alike. The lentils and bulgur provide plenty of protein and fiber, while the herbs and spices give it a flavor boost that will keep you coming back for more. So the next time you’re looking for a healthy and flavorful vegetarian dish, give mercimek köftesi a try!
Ingredients:
- 1 cup red lentils
- 2 cups hot water
- 1 cup fine bulgur
- 1 onion, finely chopped
- 2-3 cloves of garlic, minced
- 1 tablespoon tomato paste
- 1 tablespoon pepper paste (optional)
- 1 tablespoon red pepper flakes
- 1 tablespoon dried mint
- 1 tablespoon dried oregano
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, finely chopped (optional)
- Water or vegetable stock as needed
Instructions:
-
Rinse the lentils in cold water and put them in a pot with 2 cups of hot water. Bring to a boil and then reduce the heat to low. Let the lentils simmer until they absorb all the water and are soft and fully cooked. Remove from heat and let cool.
-
Place the fine bulgur in a large mixing bowl, and pour enough boiling water or vegetable stock to cover the surface by about a centimeter. Let sit for 10 minutes, or until the bulgur is fully cooked and has absorbed all the water. Fluff with a fork.
-
In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes.
-
Add the tomato paste, red pepper paste (if using), red pepper flakes, dried mint, and dried oregano to the pan. Mix well and sauté for another 1-2 minutes, until fragrant.
-
Add the cooked lentils to the pan and mix well. Cook for an additional 1-2 minutes, allowing the flavors to combine.
-
Add the lentil mixture to the bowl with the bulgur. Using your hands, knead the mixture until everything is well combined and the mixture becomes pliable. If it feels too dry, add a little bit of water or vegetable stock, a tablespoon at a time, until it reaches the desired consistency.
-
Wet your hands and form small balls or patties using the mixture. Arrange them on a platter or plate, and sprinkle with fresh parsley if desired. Transfer to the refrigerator and chill for at least 30 minutes before serving.
Enjoy your delicious Turkish Mercimek Köftesi! You can serve them as a vegetarian main course with a side salad or as an appetizer.
