Ingredients:
- 1 cup fenugreek leaves (methi), chopped
- 1 cup gram flour (besan)
- 1 cup wheat flour
- 1 tsp ginger paste
- 1 tsp garlic paste

- 1 tsp salt
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 2 tbsp oil
- 1/2 cup water
For Tempering:
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 tsp sesame seeds
- A pinch of asafoetida (hing)
- 8-10 curry leaves
Instructions:
- In a large bowl, combine fenugreek leaves, gram flour, wheat flour, ginger paste, garlic paste, green chili paste, sugar, salt, turmeric powder, red chili powder, coriander powder, cumin powder, and oil.
- Mix well and add water gradually, to make a smooth and firm dough.
- Grease your palms with oil and divide the dough into small equal-sized balls, and shape them into cylindrical rolls.
- Place the rolls in a steamer and steam for around 15-20 minutes, or until cooked thoroughly.
- Once done, remove from the steamer, and let them cool down a bit.
- Cut the rolls into small pieces and keep them aside.
- In a pan, heat oil for tempering, add mustard seeds, cumin seeds, sesame seeds, asafoetida, and curry leaves.
- Let them splutter for a few seconds, and then add the steamed methi muthiya pieces.
- Toss and sauté for 5 minutes, or until crispy and lightly browned.
- Turn off the heat and transfer to a serving dish.
