Pilav Üstü Döner (Rice and Meat on Skewer)
Turkish cuisine is famous for its rich and diverse flavors that are a result of its long history and regional influences. One such dish that encompasses many of these elements is Pilav Üstü Döner, which translates to Rice and Meat on Skewer.
It is a classic Turkish dish that is enjoyed all over the country, from street stalls to high-end restaurants. The dish consists of tender slices of spiced meat, usually beef or lamb, that is slowly roasted on a vertical spit, also known as a döner. The döner is then sliced thinly and served over a bed of fluffy rice, which has been cooked with various herbs, such as saffron, and topped with a tomato-based sauce.
The origins of Pilav Üstü Döner can be traced back to the Ottoman Empire, where it was known as “Iskender kebab.” It was named after Iskender Efendi, who is credited with creating the dish in the late 19th century in the town of Bursa, in western Turkey. The dish was an instant hit and soon became popular all across the country, eventually becoming a staple of Turkish cuisine.
The hearty and flavorful combination of meat and rice has made Pilav Üstü Döner a go-to comfort food for many Turks. It is also a staple of celebratory events and is often served at weddings or other special occasions. In fact, many people consider it to be the national dish of Turkey, alongside other popular dishes such as köfte, lahmacun, and baklava.
To prepare a delicious Pilav Üstü Döner, you will need a few key ingredients such as rice, meat, and a variety of herbs and spices, which are readily available at any Turkish grocery store or online. The meat, usually beef or lamb, is seasoned with a blend of spices, including paprika, cumin, and sumac, before being placed on a rotating spit. The spit is then slowly roasted over flame, allowing the meat to cook evenly and retain its moisture while developing a rich, smoky flavor.
While the meat is cooking, the rice is prepared separately. It is typically made with long-grain rice, which is then cooked with a stock made from chicken or beef, along with saffron, cinnamon, and other herbs and spices. This not only gives the rice a beautiful golden color but also infuses it with a fragrant aroma and delicious flavor.
Once the meat and rice are ready, the dish is assembled by placing the meat on top of the rice, and then drizzling it with a tomato-based sauce made with tomatoes, garlic, and chili peppers. Some variations of the dish also include roasted vegetables, such as eggplant or peppers, to add even more depth and flavor.
Pilav Üstü Döner is a dish that represents the essence of Turkish cuisine, with its bold flavors, rich history, and cultural significance. Whether served in a humble street-side stand or a fancy restaurant, it is sure to satisfy any appetite and leave a lasting impression on those who try it.
