- 6 samosas
- 1 cup boiled chickpeas
- 1 cup diced boiled potatoes
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 1/2 cup chopped coriander leaves
- 1/2 cup tamarind chutney
- 1/2 cup mint chutney
- 1/2 cup yogurt
- 1/4 cup sev (crunchy chickpea noodles)
- 1 tsp red chilli powder
- 1 tsp chaat masala
- Salt to taste

First, prepare the chutneys. For the tamarind chutney, soak tamarind pulp in warm water for 30 minutes. Squeeze out the pulp and discard the seeds. Add sugar, salt, red chilli powder, and roasted cumin powder to the tamarind pulp and mix well. For the mint chutney, blend mint leaves, coriander leaves, ginger, green chilli, lemon juice, and salt to a smooth paste.
