1 lb. boneless, skinless chicken breasts or pork loin, cut into bite-sized pieces
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
2 cloves garlic, minced
1 tsp. dried oregano
1 tsp. dried thyme
1/2 tsp. salt
1/4 tsp. black pepper
Wooden skewers (soak in water for at least 30 minutes before using)
