Steamed dumplings

Ingredients:
For the dumplings:
- 1 lb ground pork
- 1 cup chopped cabbage
- 1/4 cup chopped green onions
- 2 tbsp soy sauce
- 1 tbsp freshly grated ginger
- 1 tbsp sesame oil
- 1 tbsp white wine or rice vinegar
- 1 tbsp cornstarch
- 1/4 tsp black pepper
- 1/4 tsp salt
- 48 dumpling wrappers
For the sauce:
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes (optional)
Instructions:

In a large mixing bowl, combine ground pork, chopped cabbage, green onions, soy sauce, grated ginger, sesame oil, white wine, cornstarch, black pepper, and salt. Mix well until all ingredients are well incorporated.

Place a small amount of filling (about 1 tablespoon) in the center of the dumpling wrapper. Use your finger or a brush to moisten the edge of the wrapper with water.

Fold the wrapper in half and pinch the edges together to seal. Pleat the edges to form a crescent shape. Repeat until all the filling and wrapper has been used.

Place the dumplings in a steamer basket or on a steaming rack, leaving space between them. Cover and steam for 10-12 minutes or until the filling is fully cooked.

While the dumplings are steaming, prepare the dipping sauce by combining soy sauce, rice vinegar, sesame oil, honey, minced garlic, and red pepper flakes (if using) in a small bowl.
