Ingredients:
- 2 cups masa harina (corn dough)
- 1 cup chicken broth or water
- 1 cup lard or vegetable shortening
- 1 teaspoon salt
- ½ teaspoon garlic powder
- 1 pound ground pork shoulder
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 tablespoon tomato paste
- 1 tablespoon red wine vinegar
- 1 teaspoon salt
- ½ teaspoon freshly ground pepper
- 30 corn husks, soaked in hot water for 30 minutes
Instructions:
- In a large bowl, combine the masa harina, chicken broth or water, lard or vegetable shortening, salt and garlic powder. Mix well until combined.
- In a large skillet, cook the ground pork over medium-high heat for 6-8 minutes or until browned. Add the onion, garlic, cumin, oregano, tomato paste, red wine vinegar, salt, and pepper. Cook for another 5-7 minutes or until the onion is softened. Remove from heat and let cool.
