Ingredients:
- 4 flour tortillas
- 1 bell pepper (diced)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 jalapeño pepper (seeded and finely chopped)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- Sour cream and salsa for serving
Instructions:

Preheat oven to 400°F.

In a large skillet over medium heat, add olive oil and diced onion. Sauté for 3-4 minutes until the onions begin to soften.
