Balila is a simple and hearty vegan dish served in a bowl or a plate, consisting of soft and tender chickpeas complemented by bold Indian spices, lemon juice, and olive oil. This recipe has been passed down for generations in Lebanese culture and holds a very special place in the gastronomy of the country.
As a vegan dish, Balila is an excellent source of plant-based protein and fiber. Chickpeas, being the main ingredient, are a versatile legume packed with many health benefits. They are low in fat, high in protein, and an excellent source of fiber. They also contain many vitamins and minerals like iron, magnesium, and vitamin B6.
The unique blend of spices is what gives Balila its traditional flavor. A mixture of cumin, coriander, paprika, and sumac is added to the dish, giving it a bold and complex flavor. Sumac, a tangy seasoning commonly used in Middle Eastern cuisine, gives the dish a distinctive citrus-like flavor. Cumin, a warm and earthy spice, adds depth and richness. Coriander, with its delicate aroma, balances the spice with its fruity and slightly sweet flavor. Paprika adds a smoky touch and a beautiful red color to the dish.
Balila is typically served as a breakfast or brunch dish in Lebanese homes and street food vendors around the country. It is often accompanied by fresh tomatoes, onions, and herbs like parsley and mint. The dish is also sometimes served with pita bread, which can be used to scoop up the chickpeas and soak up the flavorful sauce.
The preparation of Balila is quite simple and requires only a few ingredients. The chickpeas are first boiled until they are tender, and then the spice mix is added along with some lemon juice and olive oil. The dish is then simmered for a few minutes to allow the flavors to meld together.
Overall, Balila is an incredibly flavorful dish, packed with wholesome ingredients, and is perfect for anyone looking for a healthy, plant-based meal.
